Homemade tomato sauce

This is a great and easy recipe from recipetips.com .





 1 green pepper
1/2 onion-quartered
4 tomatoes skinned
2 garlic cloves
1 teaspoon salt

In a blender, add the green peppers strips and onion. Process until liquefied. 
( I put them all together and added salsa, cumin, chili powder and Cayenne pepper to make this a enchilada sauce)

Add the tomatoes, garlic and salt. Puree until liquefied

In a large saucepan, add vegetable mixture. Bring to a boil for a few minutes, and then allow it to simmer. As it the tomato sauce simmers, the excess water will rise to the top. Go ahead and take a spoon and skim off the excess water. ( I found this unnecessary since water usually boils out)

Simmer until it reaches your desired consistency. Remove from heat and allow to cool.

Once sauce has cooled, you can either use it in a recipe, or it can be placed into a freezer container and be stored in the freezer for up to a year.

Homemade Pizza Dough Recipe


I found this on cooks.com.

Homemade Pizza Dough
1 Pkg. dry yeast
1 Cup Warm Water
3 Cups Flour (used whole wheat)
1 TSP. Sugar
1 1/2 TSP. Salt
1/4 Cup Salad Oil

Dissolve yeast in warm water. Add Sugar, salt and oil: Mix thoroughly. Add 1/2 of the flour and beat until no lumps. Gradually add remaining flour. Knead dough for 5 minutes. Place on Greased pizza pan, leave edges a little thicker than middle. Let rise 20 to 30 minutes. Bake at 450 degrees until beginning to brown, remove and add sauce, toppings and cheese. Bake again until cheese browns.

This recipe was simple and a lot of fun. The pizza tasted great. I made mine into the shape of a heart for fun.

Easter April 8, 2012



Jesus is Alive! What a great day for all of us. Here are pictures of my kids before church and to my in laws for Easter lunch. I took pictures inside before I forgot to take their pictures. We had an Easter egg hunt the day before with 12 resurrection eggs and a bunch of other eggs filled with candy. Not that my kids needed so much candy:) We had a lot of fun though finding eggs and then reading about Jesus. We also colored some eggs. I hope Everyone had a great Easter and remembered our Savior.

April Goals

I am still working on memorizing:

* I did memorize Romans 3:23

*Husband was kind enough to organize the basement. I decided that I would have a yard sale this year. Since our city wide is in May. This would be a good month to get stuff around.

* I finished last months book club book. I now need to finish Omnivore's dilemma. The problem is I only have until Friday. Our book club crept on me fast this month.

*Still need a family game night

* Still need to work on letters with my 4 year old

*I did get to talk to two of my friends. I will try to call a few more this month.

* Last but not least I need to work on planning my husband's b-day. It is the 21st this month.

Thank you Jesus for loving us. Thank you for your sacrifice for our sins on the cross. I know you are not done with me yet. Each day you are changing me little by little. Thank you Lord for revealing to me the truth everyday.
